Hi and ~happy fall~. Here are some things we’ve been into lately.
Fall in’s

Two Types of Girls
There are two types of girls in the world. I’d love to be type 1, and in my mind I am, but in reality I proved to be a strong type 2.
Type 1 is the put together girl, the one that shows up to the coffee shop at 9am with her fiance wearing light wash jeans, a white tank top, grey cardigan, small and dainty gold hoop earrings (in all three holes), a slicked back pony, a cute purse, AND A WARM SMILE.
Type 2 is also at the coffee shop at 9am (desperate for caffeine) and is rattled when her boyfriend starts waving hello to his friends (type 1 and her fiance) whom she met one time. Type 2 is hungover and it’s apparent. She can’t form a complete sentence before getting her coffee and she’s smiling with no teeth (don’t ask me why, maybe to conserve energy). She’s wearing weird shorts and an extra large sweatshirt even though she promised herself she would start wearing cute outfits…ONE DAY. Her hair could use a brush and she is in shock that she has to make small talk. Her small talk is really bad and the line is really long… you do the math.
Type 1 is talking about her wedding planning and type 2 admits in a low mumble that she was hosting a beer olympics the day before (oh the contrast!!). She proceeds to give an extremely awkward hug goodbye because in one hand she is holding her keys and wallet, the other hand her open coffee cup, and tucked away in her ARMPIT is her phone because who needs to bring a purse?! In order to avoid spilling her coffee on type 1’s grey cardigan, she gives a strange side hug and then thinks about the interaction for the rest of the day.
Fall is about striving to be type 1 but inevitably ending up as type 2 because I can’t see a day where I’m wearing jeans and charming people with my small talk at Southdown before 9am. At least I got a pumpkin muffin and drove around aimlessly after!
To All of the Caesar Salad Wraps I’ve Loved Before
You might be asking, does a caesar salad wrap really scream fall? The answer is no, it does not. However, when the craving for it hits, the season does not matter.
We’ve had a lot of Caesar salad wraps and most of them aren’t up to the standard I am holding (the bar is higher here than dating). The solution, making it yourself. So here we goooooo (Dak).
Crispy Chick’n Caesar Wraps
Ingredients:
For the dressing:
1/2 cup vegan mayo
1 tablespoon tahini
1/4 cup lemon juice (1 lemon)
1/2 tablespoon nutritional yeast
1/2 tablespoon apple cider vinegar
1/2 tablespoon caper brine
1 teaspoons dijon mustard
1/2 teaspoon garlic powder
1/2 teaspoon freshly cracked black pepper
For the wraps (makes 2):
2 vegan chick’n patties (we like Gardein Ultimate)
4 cups romaine lettuce, chopped
2 handfuls croutons (we made our own which is optional but delicious)
Parmesan cheese, grated
Caesar dressing (recipe above)
2 burrito-size flour tortillas
Method:
Make the dressing: Add the vegan mayo, tahini, lemon juice, nutritional yeast, apple cider vinegar, caper brine, dijon mustard, garlic powder, and freshly cracked black pepper to a small bowl or jar. Whisk until smooth.
Cook the chick’n: Cook the chick’n according to the package instructions.
Make the filling: For each wrap, take 2 large handfuls of romaine lettuce, 1 serving of chicken, and 1 handful of croutons. Chop them all up together on a cutting board. Add to a bowl with Parmesan cheese and mix in the Caesar dressing (about 1/4-1/3 cup per serving). Toss everything together.
Wrap them: Get a square piece of parchment paper and lay the tortilla on top. Add the Caesar mixture to the end of the tortilla. Folding the sides in first, carefully wrap it up. Placing it on a corner of parchment, wrap that the same way. Cut in half and enjoy with extra dressing. Repeat steps 3 & 4 for the other wrap.
