Hi. It’s been a gloomy week because DEBBY is coming. Let’s just say the motivation to work has been low but the motivation to watch Love Island is high. Tough battle!! Luckily we have an addiction to pasta salad so we had the incentive to make this banger.
GAME TIME
Julie and I spend a lot of time together - some would say too much time!!! But there’s really no preventing it since we work together, enjoy all the same things, and get jealous if the other person is eating something good so then we have to eat at the same time. Looks like we should go to couples therapy but that would be more time together and now that I think about it we aren’t dating!!!! Okay this took a turn and I haven’t gotten around to my point.
Here we go… we’ve run out of hypothetical questions to ask each other and I’m this close to a mental breakdown if I scroll TikTok one more time so, GAMES it is! We started playing Backgammon - this isn’t any sort of revelation considering it is literally a 5,000 year old game - but sometimes you need a gentle reminder. It’s fun to have something to do while sipping on a crispy white and chatting with your friends. It makes you feel sophisticated - it’s in the rules. If you don’t feel like chatting, that’s fine because you can just say “you’re up.” You never have to be thinking THAT hard (love that for me).
Highly recommend introducing an easy game into your life. I LOVE when someone knows of a game to play and sets it up. All I have to do is drink and play?? SURE. So be that person for me - if not me, for yourself!
If anyone has any good card games, I would love to hear them. We want fun and simple!

Before we give you the recipe, we wanted to share a list because we like lists. Simple as that. If you want people to like you, well, you are in the right place. Here is a list of things people love. “People” being ourselves but we are assuming others like it too.

Kale Caesar Pasta Salad… HA WOULD YOU LOOK AT THAT
KALE CAESAR PASTA SALAD
Caesar salad. Pasta Salad. Kale Caesar Pasta Salad. OF COURSE we brought this on our most recent trip to the Hamptons. Yes there are plenty of things to eat out there but NO you can’t find a pasta salad like this!!! Let me be me!
It hits on multiple cravings at once and makes you invincible? Idk, maybe I’ve lost it but try it out for yourself. Can’t hurt!! The dressing is drinkable and cavatappi is the superior pasta salad shape.
Kale Caesar Pasta Salad
Serves 4-6
For the dressing:
1 cup cashews
3/4 cup lemon juice
1/2 cup vegan mayo
1 tbsp dijon mustard
1-2 small garlic cloves
1 tbsp caper brine
2 tbsp nutritional yeast
1/4 cup water
For the pasta salad:
1 pound cavatappi pasta
8 ounces vegan chicken (we used Daring)
1 head curly kale, washed and chopped thinly (stems removed)
1 lemon
Drizzle olive oil
1/2 red onion, chopped
1/3 cup parsley, chopped
2 tablespoons capers, drained
For topping:
Vegan parmesan
Red chili flakes
Method:
Make the dressing: Soak the cashews in boiling water for 15 minutes. Drain and rinse them. Add them to a blender with lemon juice, vegan mayo, dijon mustard, garlic cloves, caper brine, nutritional yeast, and water. Blend until smooth.
Cook the pasta and chicken: Cook the pasta. Drain and rinse with cold water. Cook the vegan chicken according to the package instructions. Remove from heat and chop into bite-sized pieces.
Massage the kale: After the kale has been washed, de-stemmed, and chopped, add it to a large bowl. Squeeze on the juice of 1 lemon, a drizzle of olive oil, and sprinkle of sea salt. Use your hands to massage the kale for a few minutes until it wilts and turns a deep color.
Combine everything: To the bowl with the kale, add the dressing, pasta, vegan chicken, red onion, parsley, and capers. Stir to combine. Serve with vegan parmesan and red chili flakes.
